Ithaca: Flower Power Smoked Bacon & Apple Wrapped Deer Roast

For this recipe I used a deer roast but you can certainly substitute a pork or beef roast if you prefer. As always, I encourage my fellow chiefs to experiment and alter these recipes to suit their palates.
 
Smoked Bacon & Apple Roast

Yield: 6-8 servings (depending on size of roast)
Prep Time: 5 minutes
Cook Time: 4-6 hours

 
Ingredients:
4-6 lbs. deer roast
1 tablespoon sea salt
½ tablespoon onion powder
¼ tablespoon cracked black pepper
 
1honey crisp apple
1 lb. thick cut bacon

1 (12 oz.) Ithaca: Flower Power (IPA)
2 tablespoon minced garlic
1 tablespoon fresh lemon juice

 
Directions:
Rub the roast with  sea salt, onion powder, and cracked black pepper.

Bacon Blanket

Slice an apple and make a bacon blanket.
Surround roast with apples and bacon.


Smokin'
 
Place roast on the smoker at approximately 225-250°.


Flower Power Marinade









Combine the Ithaca: Flower Power, garlic, and lemon juice. Brush marinade onto roast throughout the smoking process.



Smoke for approximately 4-6 hours.
